Here are the details for my concoction or attempt to make an all-in-one, healthy, freezer meal.
Ingredients:
2 (10 oz.) cans refrigerated pizza crust (I also used crescent rolls when I ran out of pizza dough)
Handful of pepperoni slices, chopped (add as many or as few as you would like)
1 lb. ground beef
1/2 onion or 1 tbsp. onion powder
1 (6 oz.) can tomato paste
1 1/2 cups shredded mozzarella cheese
1/2 jar of spaghetti sauce
1 cup frozen or fresh spinach, chopped
1 tbsp. Garlic powder*
1 tbsp. Italian seasoning*
Pinch of salt
*Disclaimer: can't find the recipe I used, so I'm just guessing at the seasoning amounts. Just season to taste.
Directions:
Preheat oven to 350 degrees.
Chop pepperoni, onion, and spinach
Cook ground beef and onion; drain.
Stir ground beef, tomato paste, garlic powder, and italian seasoning; cook for approximately 5 minutes until thickened.
Stir spinach into meat sauce.
Unroll 1 pizza dough and cut into 4 equal squares, stretch dough (flour comes in handy during this part because the dough can get very sticky)
Layer meat sauce and 1 cup cheese on each dough section.
Wrap dough around filling, press dough together.
Cut slits in the top of each calzone.
Bake on a cookie sheet for approximately 10-15 minutes or until golden brown.
Top with spaghetti sauce and the remaining mozzarella cheese, place in the oven again until the cheese melts (approximately 2 minutes).
Yields 8 servings.
