Freezer Meal: Calzones

Photo courtesy of Myrecipes.com: Photo, Charles Walton; Styling, Leslie Byars Simpson

This recipe is adapted from a couple different recipes. This link is a variation of the recipe I made.

Here are the details for my concoction or attempt to make an all-in-one, healthy, freezer meal.

Ingredients:
2 (10 oz.) cans refrigerated pizza crust (I also used crescent rolls when I ran out of pizza dough)
Handful of pepperoni slices, chopped (add as many or as few as you would like)
1 lb. ground beef
1/2 onion or 1 tbsp. onion powder
1 (6 oz.) can tomato paste
1 1/2 cups shredded mozzarella cheese
1/2 jar of spaghetti sauce
1 cup frozen or fresh spinach, chopped
1 tbsp. Garlic powder*
1 tbsp. Italian seasoning*
Pinch of salt

*Disclaimer: can't find the recipe I used, so I'm just guessing at the seasoning amounts. Just season to taste.

Directions:
Preheat oven to 350 degrees.
Chop pepperoni, onion, and spinach
Cook ground beef and onion; drain.
Stir ground beef, tomato paste, garlic powder, and italian seasoning; cook for approximately 5 minutes until thickened.
Stir spinach into meat sauce.
Unroll 1 pizza dough and cut into 4 equal squares, stretch dough (flour comes in handy during this part because the dough can get very sticky)
Layer meat sauce and 1 cup cheese on each dough section.
Wrap dough around filling, press dough together.
Cut slits in the top of each calzone.
Bake on a cookie sheet for approximately 10-15 minutes or until golden brown.
Top with spaghetti sauce and the remaining mozzarella cheese, place in the oven again until the cheese melts (approximately 2 minutes).

Yields 8 servings.

I'm ONEderful

We'll get to my monthly happenings, but first for your viewing pleasure:

Hey all! The other day I turned one and I thought I would update you on the happenings in my life.
  • According to the doctor I weigh 18.5 lbs. and measure 27 3/4 inches long, which is in the 5th and 3rd percentile respectively.
  • I have 6 teeth.
  • I walk exclusively and have even perfected walking backwards. Running is just around the corner.
  • I usually sleep through the night, but I now insist on having a pillow for added comfort.
  • I love to listen to music and dance.
  • I finally gave in to mommy's begging and started saying momma. I also say dada, all done, one (if forced too), and please sometimes.
  • I like to mimic everything daddy does so if he howls like a wolf I howl, if he says one over and over I will say one. And I especially like it when he laughs because I can do that too.
  • I wear mostly 12 month tops, but I have short little legs and a skinny waist so most of my pants are 9 months.
  • I can now get on and off riding toys, which has opened up a whole new world of recreation for me.
  • Mommy put me in time-out for the first time this month. She was fed-up with my antics so she set me in time-out. Now I did not like that one bit and I let her know about it, but I took the punishment like a man and sat there until Mommy came and got me.
  • I love patty cake. I can even do the actions all by myself. See how much I love it in the video below.
  • I don't know where this year has gone. It seems like just yesterday I was nice and snug in mommy's tummy. But it's been a great year of growing and learning and I can't wait to see all the fun stuff I get to do in the coming year.

We rushed to the hospital.

A few hours later I got my 1st look

His proud parents

Our baby boy entered the world at 1:47 pm weighing 6 lb. 7.5 oz. and measuring 18.5 inches long.

Happy Birthday to our sweet, busy, adventurous, growing, button pushing, smiley, dancing little boy! This past year you have grown and changed so much. We can't wait to see what you have in store for us in the next year.

Someone's got the rhythm

Sawyer loves to dance...even to singing ducks. We have no idea where he got this talent from.
This was taken in Kansas on Christmas Day, so no worry we don't still have our tree up...in fact we don't even have a tree :)

This video showcases Cousin G and her moves...not really sure I would call this rhythm...maybe dancing to the beat of her own drum :)

What's that?

What is Sawyer playing on?

We've been doing a mad dash of home improvement in anticipation of S's 1st birthday. More to come on the home improvements and party decorations.
